Ok things are building now so we can look at the preview at https://dask-sphinx-theme--87.org.readthedocs.build/en/87/. I'm going to start tinkering with CSS next. |

@mrocklin, @scharlottej13 and I have been chatting recently about giving the documentation a bit of a refresh.
This theme is currently pinned to an old version of the Sphinx Book Theme which prevents us from upgrading our Sphinx version. Upgrading to a new version would likely require a large overhaul of the CSS and custom theming in this repo, so we thought we would try out a different base theme which aligned more with the design goals we have in mind.
This PR replaces the base theme and updates the custom styling to make the PyData theme look more like Dask.
